
Avocado Mango Salad
Ingredients:
1 large ripe avocado (diced)
1 large ripe mango (diced)
1 cup cherry tomatoes (halved)
ΒΌ red onion (thinly sliced)
1 small cucumber (diced)
2 tbsp fresh cilantro (chopped)
For the Dressing:
2 tbsp olive oil
1 tbsp lime juice (fresh)
1 tsp honey (optional)
Salt and pepper (to taste)
For Garnish (Optional):
Feta cheese (crumbled)
Fresh coriander leaves
Serves: 4
Preparation time: 15 minutes
Method:
Prepare the Salad:
In a large bowl, combine the diced avocado, mango, cherry tomatoes, red onion, cucumber, and chopped coriander.

Make the Dressing:
In a small bowl, whisk together olive oil, lime juice, honey (if using), salt, and pepper.
Combine & Toss:
Pour the dressing over the salad and toss gently to coat everything evenly.
Garnish & Serve:
Sprinkle with crumbled feta cheese and fresh coriander leaves (optional).
Serve immediately.
