
Mandarine & Chilli Oil
Ingredients:
peel of 1 navel orange
handful of large dry chilli
tblspn fresh chilli, choppped
500ml peanut oil
2 chopped tomatoes
handful dried mandarine
4 kaffir lime leaves torn
Method:
Put everything in a pot, bring up to about 120C for 10 to 60 minutes, depending on desired strength.
Strain and cool.
Store in the fridge - will keep for about 2 months.
