
Dauphinoise Potato
Ingredients:
400g starchy potato
2 cups cream
pinch nutmeg
cayenne pepper
white pepper
sea salt
30g grated parmesan
1 clove garlic
knob of butter
Serves: 2
Method:
Peel and slice the potato into 5mm scallops.
Place all other ingredients in the pot and bring up to a gentle simmer, cook until potato al dente and then transfer to a gratin dish.
Place under grill with a knob of butter on top and grill until golden.
