
Salad of Mango, Walnut and Avocado
Ingredients:
2 Avocados
1/2 Cup walnuts
1 mignonette lettuce
3 bacon rashers
2 mangos
1 Tbsp thickened cream
1 teaspoon french mustard
2 Tbsp lemon juice
1/4 cup olive oil
A base a colourful lettuce leaves topped with avocado, walnuts and slices of mango. Flavour is added with crisp bacon bits and a cheeky little dressing.
Serves: 6
Preparation time: 15 Minutes
Method:
Chop the bacon finely and cook in a pan until crisp. Arrange lettuce leaves and top with slices of mango, avocado and walnut halves. Sprinkle with bacon. Combine lemon juice, olive oil, cream and mustard in a jar and give it a good shake. Pour over top of salad. If, like myself you are not particularly fond of walnuts, substitute with cashews.
