
Saganaki
Ingredients:
2 tblspns flour
2 eggs, lightly beaten
1 1/2 cups fresh white breadcrumbs
2 x 180g packets haloumi cheese
olive oil, for frying
lemon wedges
rocket
Serves: 8
Preparation time: 15 minutes
Method:
Place flour in a shallow bowl. Season with pepper. Place eggs and breadcrumbs in separate shallow bowls.
Cut haloumi into 3cm cubes. Coat haloumi in seasoned flour, shaking off excess. Dip in egg, then coat in breadcrumbs. Thread cubes onto skewers.
Pour oil into a large frying pan until 2cm deep. Heat over medium-high heat. Cook cheese skewers, in batches, turning often, for 3 minutes or until light golden (cheese will start to melt).
Sprinkle with salt and serve with lemon and rocket.
