Green Papaya Salad


Ingredients:

1 small red chilli. sliced
1 large clove garlic
1 1/2 tspns palm sugar
1/3 cup snake beans, sliced 3cm diagonally
1/2 cup cherry tomatoes, halved
1/3 cup carrot, shredded
1 cup green papaya, shredded
1/3 cup Vietnamese mint
1/4 cup Thai basil
30ml Vietnamese fish sauce
30ml lime juice

A great accompaniment to lemongrass beef

Serves: 6
Preparation time: 15 minutes

Method:

In a large mortar and pestle, pound the garlic and chillies into a fine paste. Add palm sugar and pound again.

Add snake beans and cherry tomatoes and gently pound.

Add grated carrot, papaya and herbs, and gently mix with a large spoon.

Add fish sauce and lime juice, and mix through. Taste and adjust the flavour by adding more sugar, fish sauce and lime juice.

To serve, garnish with coriander, and chopped roasted peanuts to accompany the lemongrass beef.
