Elaine’s Anzac Biscuits
Ingredients:
1 cup plain flour
3/4 cup sugar
1 cup coconut
1 cup rolled oats
130g butter
1 tblspn golden syrup
1/2 tspn bi-carb soda
2 tblspns boiling water

Preparation time: 15 minutes
Method:
Combine the flour, sugar, coconut and rolled oats in a bowl.
Combine the butter and the golden syrup, stir over a gentle heat until melted.
Dissolve bi-carb soda in the boiling water, add to the melted butter mixture and stir into the dry ingredients.
Press mixture in to a soup spoon to shape, using a metal spatula to help you make the biscuit shape. Press on to lightly greased baking trays, or roll in to walnut size balls and press flat. Repeat with remaining mixture, allowing room for spreading.
Bake in a pre-heated moderate oven 180C for 12-15 minutes. Remove and cool on a wire rack then store in an air-tight container.
