Michelle’s Chicken Sandwiches


Ingredients:

3 cups cooked chicken, shredded or diced
125g (half of a tub) Philadelphia cream cheese, softened to room temperature
1/2 cup mayonnaise (adjust to preference)
1/2 cup celery, finely diced
1/3 cup spring onions, finely sliced
1/2 cup slivered almonds, lightly toasted
Salt and fresh cracked black pepper to taste
Your choice of bread

Michelle’s famous chicken sandwiches, perfect for all outdoor occasions!

Method:

Soften the cream cheese: Ensure your cream cheese is at room temperature so it can be easily blended into a smooth dressing.

Combine dressing ingredients: In a medium bowl, beat the softened cream cheese and mayonnaise together until the mixture is smooth and well combined. A hand mixer makes this quick, or you can use a whisk.

Mix the salad base: In a separate large bowl, combine the shredded chicken, diced celery, sliced spring onions, and toasted slivered almonds.

Combine everything: Pour the creamy dressing over the chicken mixture. Gently fold everything together until all ingredients are evenly coated.

Season and chill: Season the chicken salad generously with salt and pepper to taste. For best results, cover the bowl and refrigerate the mixture for at least 30 minutes to allow the flavors to meld.

Serve: Spoon the chicken salad onto your favorite bread and enjoy.
